Any chocolate truffle lovers?!? your most favorite recipes are needed!!?

i love making truffles ..but i only make the same kind over and over again ..well because they're good ..can you blame me?? =) ..i want to try something new but also something that won't waste my chocolate and my time ..i'm a milk chocolate person ..not very fond of dark chocolate ..i like fruit-cream centers too and not really into nuts ..any suggestions?!?!Any chocolate truffle lovers?!? your most favorite recipes are needed!!?

heres my recipe (i use this all the time too! i need a new one. if you choose me as best answer give me your recipe!)





INGREDIENTS:


1/2 cup heavy cream


2 Tablespoons unsalted butter


1 teaspoon light corn syrup


8 oz. chopped, semi-sweet chocolate + 6 oz. for dipping


about 1/2 cup Dutch-process cocoa powder, sifted


PREPARATION:


1. Mix the cream, butter and corn syrup together in a saucepan. Place over medium heat and bring to a full boil. Turn off heat.





2. Add 8 ounces of the chopped chocolate, and gently swirl the pan.


Do not stir. Allow to rest for 5 minutes.





3. After 5 minutes, whisk slowly to combine.





4. Transfer the mixture to a bowl and refrigerate for 45 minutes, stirring every 15 minutes. In the meantime, line baking sheets with parchment paper.





5. After 45 minutes, the mixture will start to thicken quickly, keep refrigerated another 11 to 15 minutes, stirring every 5 minutes.





6. Using a mini ice cream scoop or two spoons, form the mixture into 1-inch balls and and place on the prepared sheets.





7. Chill until firm, about 10-15 minutes. While the balls are chilling, melt the remaining 6 ounces of chocolate. After it is completely melted, allow to cool slightly before continuing.





8. Place cocoa in small bowl. Remove the balls from the refrigerator. Using one hand, dip the balls into the melted chocolate. Roll it around in your hand, allow the excess to drip back into the bowl. Place the truffle in the cocoa. With your clean hand, cover the truffle with cocoa.





9. Lift it out and place on the baking sheet. Repeat with the remaining truffles. Place back in the refrigerator for 5-8 minutes to set.

Chocolate Truffle Cheesecake





Ingredients:


1 1/4 cups Oreo cookies, baking crumbs


1/4 cup melted butter


3 (8 ounce) packages cream cheese, softened


1 cup sugar


1 teaspoon vanilla


6 semi-sweet chocolate baking squares, melted %26amp; slightly cooled


3 eggs





Steps:


1. Combine crumbs %26amp; butter; press onto bottom of 9 inch springform pan.





2. Beat cream cheese, sugar %26amp; vanilla on medium speed until well blended.





3. Blend in melted chocolate.





4. Add eggs one at a time; mix just until blended.





5. Pour over crust.





6. Bake at 350掳F for 45-50 minutes or until centre is almost set.





7. Cool completely, then refrigerate for 3 hours or overnight.

Easy Oreo Truffles





1 pkg -18oz Oreo chocolate sandwich cookies, divided


1pkg (8oz cream cheese, softened


2 pkg ( 8oz each) Baker's semi sweet baking


chocolate, melted





Crush 9 of the cookies to fine crumbs in food processor; reserve for later use (I use a blender or you can put them in a resealable plastic bag and use a rolling pin to crush them.)


Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into balls, about 1 inch in diameter. Dip balls in chocolate; place on wax paper- covered baking sheet.


Sprinkle with reserved cookie crumbs.


Refrigerate until firm, about an hour.


Store covered in refrigerator. Makes approx 40-50 truffles





You will have some leftover cookie crumbs. I just put them in a freezer bag and put them in the freezer. We like to use the crumbs with ice cream.


For easy dipping, place truffle ball in melted chocolate to coat; Lift truffle from chocolate using two forks (this will allow extra chocolate to run off) before placing on wax paper





I also substituted mint Oreo. I had to tweak it a little bit because there are less oreos in the 18 oz pkg.


Oh yea, I'm not too crazy about cream cheese, the Oreos and chocolate disguise the taste.
