Looking for a truffle recipe with no chocolate/cocoa?

I am having trouble finding a nice truffle recipe to make that has no chocolate or cocoa in it...

COCONUT APRICOT TRUFFLES





1 1/2 cups whole, unsalted almonds


2 cups dried apricots


2 teaspoons cinnamon


2 teaspoons almond extract


1/2 cup sweetened shredded coconut





DIRECTIONS


In a food processor with the knife blade, thoroughly combine first four ingredients until the mixture forms a dough-like ball. Using your hands, firmly roll into 1-inch balls. Roll in coconut.


Looking for a truffle recipe with no chocolate/cocoa?
You can take any truffle recipe and just use white chocolate instead, because white chocolate isn't really chocolate. Or, make peanut butter ones instead.





Combine 1 cup peanut butter with 1 cup powdered sugar and a splash of vanilla. Refrigerate the mixture about an hour. Take a teaspoonful and roll it into a little ball. Roll the ball in powdered sugar to coat. Some grocery stores sell flavored peanut butter, so you could make several flavors if you want. Good luck!
Peppermint truffles





200g milk carob, melted


1/4 cup cream


1/3 cup sultanas


1/3 cup ground hazelnuts


peppermint essence


3/4 cup chopped roasted hazelnuts





Combine carob, cream, sultanas and ground hazelnuts in medium bowl, stir in essence to taste, cover, refrigerate for 30 minutes.


Roll heaped teaspoons of mixture into balls, toss in chopped hazelnuts, cover and refrigerate until firm.
Why? I thought that was the idea of truffles - chocolate.
use white chocolate, its not real ,no coco
